For the past 8 weeks my friend Elsa has been sitting, waiting, wishing her kitchen renovations to be finished, and chance made her really handsome electrician (are they all this good-looking?) to finish the job last Tuesday, which coincided with a magnificent Coles sale of Poblano chillis. To celebrate the connection of her cooktop, oven and (most importantly) dishwasher we decided to go big and prepare some “rajas con crema y queso” along with freshly made tortillas.
It had been a long day for Elsa and Diego (her hubby) as they had been cooking in a camping cooktop for the past weeks, but I think the wait was worth it. The colours, and appliances look really neat and transcendent; this kitchen will give a really good base from where to go into future house renovations. As for Mexican cooking, you can tell there will be plenty.
